| Ripening | 23 months (!!!) in aged barrels, resulting in a rosé that far exceeds the standard of rosé. Finally bottled in 2023, using only gravity (not siphoning the wine with a pump minimizes the "shock" at bottling; admittedly, for the winemaker, this method is not the most practical). |
