Quinta da Vacariça
François Chasans spent his life surrounded by wine. Among other things, he worked for the renowned Fauchon in Paris before starting his own wine store.
When he discovered the Baga grape, he was immediately in love and firmly convinced that he could make great wine with it.
François discovered the exceptional quality of Bairrada wines in 1998, during a visit to the Expo in Lisboa. He purchased Quinta de Vacariça not much later and harvested his first grapes in 2008. Today, he still commutes between Paris, where he continues to operate his wine store, and Bairrada.
In the small Bairrada region,
the Frenchman's idiosyncratic working methods and very outspoken opinions are not always met with cheers but we are charmed by his approach. François resolutely opts for biodynamics in the production of his wines. He prefers aging in terracotta amphorae or old wooden barrels.
He sells wine only when he feels the wine is ready for the market.
Thus it happens that the youngest Garrafeira he offers today is the 2014 and at the same time there is also 2008 and 2009 for sale. If he has doubts about the quality of a vintage he decisively declassifies it and it does not come to bottle as Garrafeira.
He is also not afraid to let his prices rise as well as fall according to the quality of his wine.
Most producers are familiar with raising prices, but dropping them afterwards...
Either way, François makes wines brimming with character as you would expect from a 100% Baga.
